Gluten Free Vanilla Blueberry Pancakes

Ingredients:

  • 2 2/3 cupĀ Pamela’s Baking & Pancake Mix
  • 4 teaspoons baking powder
  • 2 cups water
  • 2 tablespoons sugar
  • 1/2 teaspoon sea salt
  • 1/2 cup unsweetened applesauce
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh blueberries

Directions:

  1. In a large bowl mix ingredients together.
  2. Grease pan (Coconut oil will give pancakes a nice crispy outside)
  3. 1/3 cup of batter makes a 4 inch pancake (recipe yields about 14 pancakes)
